Last night was Taco Tuesday at my house, so I tried these delicious, smoky-flavored soft tacos made of butternut squash. After all, Trader Joe's makes these so easy to throw together when they have pre-cut bags of squash. However, you can use banana squash in this recipe, if you'd rather. I found it in The New York Times, and I was glad to see that one serving is only 178 calories, so you can keep your eating in check over the holidays.
|First of all, Trader Joe's carries pre-cut two pound bags of butternut squash, making this recipe very easy.|
|Mince 2-4 chipotles in adobo. This adds the smoky-spicy flavor.|
|Add chipotles to the pan and cook for another minute or two.|
|Next, remove from the heat and stir in ½ cup plain yogurt.|
Keep it warm while you heat the tortillas, but not so warm that the yogurt curdles.
The yogurt cools the spiciness quite a bit.
|Steam tortillas over ½ inch of water for about 1 minute.|
You may need to wrap them in a kitchen towel, so they don't stick to the steamer basket.
|Finally, top the tortillas with the squash and sprinkle with queso fresco.|
If you don't have queso fresco available, feta will do.
