I'm Baaaaaaaack!

and this is where I've been spending a lot more time.
First of all, I want to apologize for taking off for much longer than a week.  Secondly, I want to explain that it was a good idea and very, very good for my soul.  I read The Happiness Project while I was away and decided that it would be beneficial for me to get some sleep.  I also decided that one of my happiness resolutions is to stop being in a rush all the time.  My close friends know that I am the type of person who uses a timer for everything just to see if I can get myself to go a little faster.  Tidying up the kitchen?  10-minute timer.  Folding up the laundry?  20-minute timer.  Getting ready for a night out?  30-minute timer.  As you might imagine, this drives my husband crazy.  At any rate, I am a stress ball with a tendency to burn the candle at both ends, and I didn't realize that blogging was throwing my life out of balance.  I wasn't taking enough time to rest.  I only slept five or six hours a night.  I never read books that I just felt like reading for fun, and I never watched television or movies.  Now, I'm sleeping seven or eight hours a night, I'm all caught up on season 1 of Downton Abbey, and I just spent an evening immersed in Joan Didion, so life is back to normal.  I truly feel like a different, better person, so while I love blogging, I've realized that I can't do it all.  I will be posting here on a once or twice a week basis because quite frankly, I don't know what made me think that someone who teaches full time can devote so many extra waking hours to blogging.  I'll be seeing you!

Little Miss Busy

Please excuse me while I take a week off from blogging.  I have a to-do list that seems like it's miles long and includes a big stack of papers to grade.  Our school's semester just ended, so I need to submit grades as soon as possible, but I hope to be back on Friday.

Black and Blue

I just love nightgown dressing.  Somehow, putting bold black and blue stripes on a simple, long sweater dress makes it seem like it's not a nightgown in disguise.  Tricky, right?  Throw on a jacket and a statement necklace, and you're done.  I bought this dress in a tan and white stripe too because it was just too comfortable to pass up.  In other news, we found this amazing historic garage for the background of these photos.  It's called Borradori Garage, and it overlooks Cayucos and Morro Bay.  I spent the afternoon imagining welding in there all day with that incredible view.  Sometimes I just want to take a peek into other peoples' lives.  I wonder if you would even appreciate the view after working in there day and day out.

Black Bean Smothered Sweet Potatoes

I'm sorry.  I'm sorry.  I know some of you might not consider this "real cooking," but there are some days a girl just has to use the microwave.  Those days include staying at work two hours longer than you expect to, hitting the gym, the dry cleaner, the drugstore, the grocery store, and paying bills all before you can settle into dinner.  For me, that was last night, so I share with you my go-to healthy recipe for nights when cooking seems like just one more item on my list of things to do that's going to make me tired.  On the plus side?  This recipe has a warm, almost nutty flavor that makes it seem like comfort food, and it's healthy!

Ingredients
  • 1 sweet potato
  • about ½ 15-oz can black beans
  • ½ tomato , diced
  • 1 teaspoon extra virgin olive oil
  • ¼ teaspoon ground cumin
  • ¼ teaspoon ground coriander
  • salt to taste
  • 1 tablespoon low-fat plain yogurt
  • 1 tablespoon fresh chopped cilantro

While your sweet potato is baking in the microwave ( you can use a Micro Baker or prick a regular sweet potato a few times and microwave it on high for 12 to 15 minutes), combine beans, cumin, coriander salt, and oil in a microwave-safe bowl.
Add tomato and microwave on high for 2-3 minutes or heat on the stovetop in a 
small saucepan.
When you can stand to handle the sweet potato, slash it down the middle and fill it with the bean mixture.    Top with yogurt and cilantro as seen in the top image.

Wintry Beach Mornings

I love beach mornings in winter.  Yes, it's cold, but everything is peaceful and quiet with only the die-hard surfers out and about.  Mornings like this call for the company of someone you love, a cup of coffee, and an oversized sweater.  Some might call this particular tunic sweater a boring tent, but I don't care.  It's comfortable simplicity has me reaching for it on mornings when I just want to feel relaxed and warm.  It makes getting dressed easy which is why I took it on my recent weekend getaway.  As you can see from this post and this post, my palette was very black that weekend.  That's always the simplest way for me to make sure that everything matches when I travel.

I love the gold-rimmed buttons at the back of the collar.
Heels probably weren't the most appropriate choice...
But they're always easy to take off!
